Executive Sous Chef – Fairmont Empress

Oversee culinary operations, menu development, budgeting, and team leadership at Fairmont Empress in Victoria, BC.

Key Responsibilities

  • Lead day-to-day operations of the various kitchens and stewarding departments.
  • Collaborate with other culinary leaders to oversee the entirety of the culinary and stewarding departments, including a la carte, banqueting, afternoon tea, garde manger, Fairmont Gold and staff cafeteria.
  • Participate in managing the departmental budget through purchasing, inventory management, pricing, and labour cost.
  • Drive revenue and profit through menu design, strategies, practices and promotions.
  • Maintain food safety and sanitation of the kitchen using leading food safety protocols.
  • Source products and build relationships with local vendors.
  • Represent the Empress at external events.
